Sour beers are becoming increasingly popular in the craft beer world as brewers experiment with different techniques to create unique flavor profiles. While the tart, acidic flavors may not be for everyone, those who enjoy sour beers often find them to be refreshing and complex.
As part of my research to write this post, I went through 383 sour beers and the response from breweries on their ingredients and status as vegan or non-vegan. Of all those sour beers, 86 contained ingredients of animal origin such as finings extracted from fish, pigs or cows.
But this also means that 297 out of 383 or 77% of all sour beers tested were vegan! So the chance of encountering a sour beer that is not vegan is around 23% and therefore relatively low still.
Because sour beers are made in a manner very similar to traditional beers but using lactic acid bacteria in addition to ordinary yeasts, this process does not affect the vegan status of sour beers, but the additions of clearing agents (finings) derived from animals will.

What are sour beers and how are they made?
Sour beers are beers that have been intentionally fermented with wild yeast and bacteria, resulting in a tart, acidic flavor. The most common sour beer styles are Belgian lambics and gueuzes, German Berliners and gose, and American sour ales.
To make sour beer, brewers typically brew a wort (unfermented beer) using pale malt, sometime including wheat to give a thicker mouthfeel and add aged hops for bitterness.
Then, they introduce the wort to barrels or tanks that either naturally contain Brettanomyces yeast and lactic acid bacteria or they may add them as a culture. These are the yeasts and bacteria that make the acids that characterize sour beers!
The beer is then left to ferment for anything from a few weeks to several months or even years. During this time, the yeast and bacteria work together to create the desired tart flavor profile.
Finally, the beer is bottled or kegged like any ordinary beer before serving but some are stored to improve complexity and taste.
Some sour beers like the Lambics are aged for years in large oak barrels to give a more complex and funky taste.
A gueuze is an old, aged, lambic mixed with a newly brewed lambic, which gives a good balance between new and old and the opportunity for the brewer to perform a second fermentation on the bottle.
Why would a beer not be vegan?
There are a few reasons why some brewers add animal ingredients to their beer. One reason is that these ingredients can help to improve the flavor and aroma of the beer.
Another reason is that they can help to improve the head retention and mouthfeel of the beer. Finally, these ingredients can also help extend the beer’s shelf life or visual appearance.
One of the most common animal ingredients used in beer is isinglass, which is a type of collagen that comes from fish. Other common animal ingredients include gelatin (from cows or pigs), eggs, and lactose (from milk).
Especially lactose may be added to sour beers because it is the favorite food of lactic acid bacteria and will lead to a stronger more acidic beer. For normal beers, lactose can simply add sweetness as it is not easily digested by the yeast alone.
Isinglass is a type of fining agent that helps to remove protein haze and other unwanted particles from the beer. Gelatin is another type of fining agent that can help to improve the clarity of the beer.
The proteins from eggs are also used as a clarifying agent, but they can also add a creamy mouthfeel to the beer. The latter is also the case for glycerol, which is also sometimes added to beer but mostly to enhance the taste and body of the beer.
Glycerol can be derived from animals but is often also derived from plants, so you will have to ask the brewing company where they get their glycerol from (or just look up your favorite beer in my list of vegan beers below!). But glycerol is rarely used and can be plant-derived, so should not be of major concern.
In short, the vast majority of non-vegan beers are not vegan because of the clearing agents used. So if you are drinking a hazy beer, you should be less concerned about the presence of animal ingredients as they have (clearly…) not been subject to clearing agents.
Vegan clearing agent alternatives for brewing
So what about vegan alternatives to the traditional fining agents used in brewing? Well, there have not been so many options, but some companies are working on mushroom or seaweed-based alternatives to the animal-derived options available today.
These plants offer some of the same long-chained protein or polysaccharide structures that give the animal-derived collagen its ability to clear beverages such as sour beers, ordinary beers, cider, and wine.
Apart from clearing agents, there are also other options for clearing a brew without animal ingredients. For example, a beer can be filtered mechanically or plant-based clearing agents can be added such as enzymes that cut the large hazy molecules into pieces.
Such enzymes have the added benefit of making the beer gluten-free as well as clearer as the gluten proteins can cloud the beer if too abundant.
Below I will first present all the beers and breweries that do use one or more animal-derived components in their sour beers, and hereafter a list of all the beers that do not have animal components in them!
